Pani Puri (Gol Gappay)

Pani puri  (Gol Gappay), also known as golgappa or phuchka, is a popular street food in Pakistan, India and other parts of South Asia. It is a type of chaat, a category of snacks that are popular in India, Pakistan, and Bangladesh. Method in English

Take the semolina, maida, baking soda and salt in a wide-mouthed bowl and mix well.
Add water in small incremental amounts and tie the stiff dough.
Cover it with a damp cloth and set it aside for 20-25 minutes.
Remove the cloth and knead again to a smooth texture.
Divide the dough into 4 equal portions. Take each portion and shape it into a round ball. Press it between your palms and place it on the rolling boar.
Roll it out with a rolling pin on roti of round shape with a thickness like phulka roti or chapathi (about 1-2mm). Don’t roll it too thin or too thick. If it is very thin, the puri will not puff up when frying, and if it is thick, the puri will not get crispy after frying.

Remove the excess dough and mix it with the remaining dough. Make puris with the remaining dough.
Heat oil in a deep skillet over medium heat to fry. When the oil is half hot, take 5-6 puris and gently slide them into oil (don’t drop them together, do it one after the other). Press each puri down a bit with a spatula (to puff them up). Fry them until crisp and lightly golden. Remove and place on a paper towel to absorb extra oil. Store them in an airtight container after they cool and consume within 2-3 weeks.
Rinse the coriander and mint leaves in water and take all the pani ingredients.
Add mint leaves, coriander leaves, green chilli, ginger, and lemon juice (lemon juice is added while grinding to prevent the mint leaves from darkening) into the small jar of chutney from a grinder.

Grind to a smooth paste (if necessary, add 1/4 cup of water while grinding).

Transfer them to a large bowl and add sugar, chaat masala powder, black salt, and 4 cups of water. Stir with a large spoon and mix well. Taste for salt and add as needed. Pani is ready; place in the refrigerator for at least 1 hour before serving or use at room temperature. If you like soft boondi, mix it up now. If you like the crunchy taste of boondi, mix it up when serving.

Take mashed potato, kala chana, red chilli powder, cumin and coriander powder, chaat masala powder, coriander leaves and salt (add only if you have not added it when boiling the potatoes and chana) in a bowl.

Mix them with a spoon. Masala is ready.

Take each puri and carefully make a large hole in its top center with a spoon or your index finger or thumb for filling.

Fill it with masala (more or less, as you like). Sprinkle onion and slice on top and drizzle a drop of tamarind-date chutney on top. Take pani-puri water in a medium bowl. Dip each puri in water and enjoy…

ایک چوڑے منہ والے پیالے میں سوجی، مائدہ، بیکنگ سوڈا اور نمک لیں اور اچھی طرح مکس کریں۔

Method in Hindi

सूजी, मैदा, बेकिंग सोडा और नमक को एक चौड़े मुंह वाले प्याले में डालकर अच्छी तरह मिला लीजिए.
थोडा़ थोडा़ पानी डालते हुए सख्त आटा गूंथ कर तैयार कर लीजिए.
इसे गीले कपड़े से ढककर 20-25 मिनट के लिए अलग रख दें।
कपड़ा निकालें और फिर से गूंध कर मुलायम बना लें।
आटे को 4 बराबर भागों में बाँट लें। प्रत्येक भाग को लेकर गोल लोई का आकार दें। इसे अपनी हथेलियों के बीच दबाएं और रोलिंग बोर्ड पर रख दें।
इसे फुल्का रोटी या चपाती (लगभग 1-2 मिमी) की मोटाई के साथ गोल आकार की रोटी पर बेलन से बेल लें। इसे ज्यादा पतला या ज्यादा मोटा ना बेलें। अगर ज्यादा पतली होगी तो पूरी तलते समय फूलेगी नहीं और अगर ज्यादा गाढ़ी होगी तो पूरी तलने पर कुरकुरी नहीं बनेगी.

अतिरिक्त आटे को हटा दें और इसे बाकी आटे के साथ मिला लें। बाकी के आटे से पूरी बना लें.
तलने के लिए मध्यम आँच पर एक गहरी कड़ाही में तेल गरम करें। तेल आधा गरम होने पर 5-6 पूरियां उठाइये और धीरे से तेल में डालिये (एक साथ मत डालिये, एक के बाद एक करिये). प्रत्येक पूरी को कलछी से थोड़ा नीचे दबाएं (उन्हें फुलाने के लिए)। इन्हें कुरकुरा और हल्का सुनहरा होने तक तलें। अतिरिक्त तेल को सोखने के लिए पेपर टॉवल पर निकालें और रखें। ठंडा होने के बाद इन्हें एयरटाइट कंटेनर में भर कर रख लें और 2-3 हफ्ते में खा लें।
धनिया और पुदीने की पत्तियों को पानी में धो लें और पानी की सारी सामग्री ले लें।
चटनी के छोटे जार में पुदीने के पत्ते, हरा धनिया, हरी मिर्च, अदरक और नींबू का रस (पुदीने के पत्तों को काला होने से बचाने के लिए पीसते समय नींबू का रस डाला जाता है) डालें।

पीसकर मुलायम पेस्ट बना लें (यदि आवश्यक हो तो पीसते समय 1/4 कप पानी डालें)।

उन्हें एक बड़े कटोरे में निकाल लें और उसमें चीनी, चाट मसाला पाउडर, काला नमक और 4 कप पानी डालें। एक बड़े चम्मच से हिलाएँ और अच्छी तरह मिलाएँ। नमक चखें और आवश्यकतानुसार डालें। पानी तैयार है; कमरे के तापमान पर परोसने या उपयोग करने से पहले कम से कम 1 घंटे के लिए रेफ्रिजरेटर में रखें। अगर आपको नरम बूंदी पसंद है, तो इसे अभी मिला लें। अगर आपको बूंदी का कुरकुरे स्वाद पसंद है, तो इसे परोसते समय मिलाएं।

एक प्याले में मैश किया हुआ आलू, काला चना, लाल मिर्च पाउडर, जीरा और धनिया पाउडर, चाट मसाला पाउडर, हरा धनिया और नमक (अगर आपने आलू और चने उबालते समय नहीं डाला है तो ही डालें) लें।

इन्हें चम्मच से मिलाएं। मसाला तैयार है।

प्रत्येक पुरी लें और ध्यान से भरने के लिए उसके ऊपरी मध्य में एक चम्मच या अपनी तर्जनी या अंगूठे से एक बड़ा छेद करें।
